1 lb ground meat (turkey or could substitute beef, pork and/or venison )
1 cup Italian seasoned bread crumbs
1 egg
1 cup Parmesan & Romano cheese
1 small can of tomato paste
Garlic or onion chopped fine to taste

Mix it all up thoroughly then roll the meat balls about the size of a golf ball. Pan brown in olive oil turning as needed so as not to burn (or toast in the oven on low broil). Add to your favorite simmering sauce and cook till done through.
(Don't have a favorite sauce - here is one that is loaded with flavor and good stuff -- it's a meal by itself):
1 large can of chopped stewed tomatoes
1 large can of tomato sauce
1 medium can of tomato paste
1 (optional) whole roasted head of garlic or 2 cloves of thin sliced, smashed
or chopped garlic
1 chopped onion
1 chopped green pepper
1 chopped red pepper
Italian seasoning to taste (or a teaspoon)
Hot pepper flakes to taste (or a half teaspoon )
Salt or salt substitute to taste (or half teaspoon)
Fresh ground pepper (half teaspoon)
Chop and saute' all the vegetables (except the garlic) but not all the way thru. Add all the seasonings, add the garlic and don't let the garlic brown. Add the paste, let it heat up with all of this goodness, then add the sauce and stewed tomatoes slowly so as not to cool down the other stuff. Bring to a slow boil (if you are cooking meatballs add them now) then turn
down to simmer for 45 minutes. Serve over pasta, or as meatball sandwiches, etc. Top with fresh basil and/or grated Parmesan or Romano cheese. Add a batch of garlic bread and Enjoy! Should be enough for a family meal or two.

Melt one stick of butter and add fresh dill, 1/2 cup lemon juice - to poor over salmon. Bake at 350 for 20 minutes.
3 avocado
1 cup sour cream
4 tbp mayo
1.5 tbp lemon juice
3 cloves of garlic
1 tsp Worcestershire sauce
1 tsp salt
1 tsp pepper
Combine all ingredients and puree. Serve on the side with the salmon.

1 cup dijon mustard
4 oz balsamic vinegar
1/2 cup Minced Garlic
1 tbsp Salt
1 tbsp cracked black peppe
2 cup fresh basil leaves (packed)
1 quart olive oil
Combine all and process in oil on high.

1 tbsp. butter or margarin
2 Ounds cooking apples such as Golden Delicious, peeled, cored
and sliced into wedges
3 tbsp. granulated sugar
1 tsp vanilla
1/8 tsp. ground cinnamon
1 cup milk
2 eggs
2 egg whites
1/4 tsp. salt
1 cup of flour
Confectioners sugar
Eggy and Yummy! Made in 13x9 pan or skillet

1. Heat oven to 425
2. Melt butter in large "oven proof" skillet
3. Add apples, 2 tablespoons sugar; cook, stirring, 15-20 minutes, until apples are tender and liquid has evaporated
4. Stir in vanilla and cinnamon
5. Remove from heat
6. Beat together milk, eggs, egg whites, remaining 1 tablespoon sugar and salt in bowl
7. Gradually whisk in flour until well blended and smooth
8. Pour batter over hot apples
9. Bake in oven for 20 minutes
10. Reduce heat to 350, bake 10-15 minutes until puffed and browned. Sprinkle with sugar. Cut into wedges

2 lbs of ground beef (or turkey)
1 16 oz can refried beans or black beans
1 can of corn
1 envelope of taco seasoning
12 oz flour tortillas
4 cups shredded cheddar
1 - 16oz jar of salsa
2 cup water
2 cup sour cream
1 small can sliced black olives
3 green onions (or scallions), chopped

1. Cook ground beef in skillet and drain
2. Stir in beans, corn and seasoning mix
3. In 13 x 9 x 2" greased pan, layer 1/3 tortillas, meat, cheese, repeating layers twice
4. Combine salsa and water and pour over top
5. Cover and bake at 350 for one hour, until heated through
6. Top with sour cream olives, green onion, cheese
7. Bake uncovered 5 minutes longer, let stand 10 minutes.

2 large eggs
1 cup sugar
2/3 cup vegetable oil
1 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 cup grated zucchini
1/2 cup grated carrots
1/2 cup raisins
1/2 cup chopped walnuts
1 1/2 cups cream cheese frosting (recipe below)
1. Preheat oven to 350 degrees. Lightly butter a 9 inch square baking dish.
2. Beat the eggs with the sugar in a large bowl until frothy, and then beat in oil.
3. In another large bowl, mix flour, baking soda, salt and cinnamon. Add flour mixture to egg mixture and beat until well mixed.
4. Add the zucchini, carrots, raisins and walnuts and stir to mix into a stiff batter. Spoon the batter into the baking pan and bake for 35 minutes, or until toothpick in center comes out clean. Frost when cooled.

Cream Cheese Frosting
3 ounces cream cheese, softened
1 tbsp butter, softened
1 cup confectioners' sugar
Beat until smooth. Frost and enjoy!
